We were so glad we decided to go with Island Organics when we were deciding on a Thai Cooking Class. Booking the class and transport was a smooth process through Cam's efficiency. Cam is also the 'technical' guy, explaining the mechanics behind the aquaponics and methane gas system on his amazing organic farm. Equally passionate is Lat, his wife, whose innovative and never-say-die spirit was such an inspiration. As she explained how she made her 'worm tea' and the ups and downs they had gone through to reach this stage at Island Organics, we couldn't help but admire her positivism and entrepreneurial spirit. And all that was before the cooking started! I don't cook that often, but Lat's instructions were clear and easy to follow. We got to pound our own spices in the traditional mortar and pestle, and even grate a fresh coconut the traditional way. We ended up with four large dishes that were impossible to finish (I highly recommend you skip breakfast!). Cam and Lat do offer to pack what you cannot finish to take back with you. The rest goes to the compost, of course! A truly enjoyable experience and I would dare say, quite unforgettable.
