We made our reservation for high tea (through OpenTable) well before our trip to Ireland. In doing so, we were able to be seated in the Connaught Room, which books up during busier travel seasons, and has an interesting history of hospitality during the time the Guinness family lived in the castle. The staff was incredible. Upon arriving at the castle, on of the staff at the front door provided us a brief, impromptu tour of the hotel common areas. He then directed us to feel free to wait for our seating in the ante room or on the hotel lawn. The tea, the food, the desserts, the scones were absolutely delicious. Even though we were being served high tea, the wait staff was not stuffy at all and made us feel welcome. One note is that the champagne offered is NOT included in the cost of tea.
