The Tonkotsu ramen here is the closest thing I’ve found to what you get in Tokyo. Pay attention to the food here. Notice that they rush the noodles to you so they don’t get soggy, and that the shaggy is actually char-sui, emphasis on charred, so you get even more umami. The flavors here are top notch.
Try the ramen with Brussels sprouts, and if you like gyoza, you have to try it here.
