Girlfriend and I had dinner here on our last night in Highlands NC and it did not disappoint. It was one of the most enjoyable dining experiences we've ever had. Had the tuna tartare appetizer and it was amazing. The wine list is quite extensive and will make you wish you had a nice trust fund waiting for you at home! She had the halibut stuffed with crab and I had the lemon risotto with shrimp and scallops. It was one of the best meals I've ever had - perfectly cooked, perfect temperature, just perfect all around.

Awesome service, wonderful food, who could ask for more?

Its not cheap, but you get what you pay for...and at Ristorante Paoletti you will get an amazing meal that you won't soon forget!

While on vacation my wife and I were deciding between this restaurant and a German place for our special night. Based on the reviews we went with Paolettis. Wow! Are we ever glad we did! Our server, Robbie, was the perfect waiter, the kind that you expect to have but don't always get when it comes to fine dining. He was never rushed, and had remarkable poise. Despite it being a full restaurant he acted as if we were his only table. He answered all of our questions in depth and made the perfect wine recommendation. He was very efficient and was always there when needed without being intrusive. From the escargot to the creme brulee the food was "excellente", the escargot being even better than what we were served in Rome. If you get a chance definitely do yourself a favor and dine here! They made our special night magical.

Six of us came here, needing three checks. A big mistake. They give you one bill for the table and tell you to figure it out. What a bad end for an average meal. Four of us were happy with our food, and two were not at all. They did replace those with something better.

We appreciate your business and feedback. We are sorry that two in your party were not happy with your food? While offering no specifics as to the malfunction with what was served, I suspect that the real issue is in wanting for separate checks? While it is clearly stated on our menu that we accept up to 8-forms of payment for any one dinner check, we do not offer 'separate checks' for a very good reason: The waitstaff are busy serving wine, appetizers and dinner to our customers which in aspiring to give attentive service to all of our clientele, this practice leaves no time to split checks, separately. Our servers while being very professional and courteous, the house policy is to offer one dinner check per table, as is customary in fine dining establishments. We do offer a calculator to be brought to the table should this be of help in determining your personal expenditure. Those that demand separate dinner checks may find this accounting more easily accommodated in a quick-service restaurant, rather than in a fine dining establishment.

Linguini with clam sauce was wonderful. Service impeccable. Price was very reasonable considering atmosphere and food taste and prep.

A real gem in Highlands. Burrata caprese salad was perfect, carbonara was excellent, wife’s Dover sole perfect, my scallops exceptional. Perfect except for wine list. Extensive yes, Italian selection extensive. Problem? Price, few under $100, many $200-300. Had a Super Tuscan for $88 that I’ve purchased before for $22. I’d expect $40-50 not four times retail.
