We split our time between Thatch Caye and Copal Tree Lodge. It really was the perfect combination. Thatch gives you the island/beach life, while Copal offers the whole jungle experience. The first thing I have to rave about is the food. Wow. Wow. Wow. They really promote the farm to table experience and you can instantly tell how fresh your food is by the first bite. So five stars to the chef! All of the staff were super friendly and were there to make sure your needs were always met.
While at Copal Tree, we booked fly fishing and the on-site chocolate tour. The chocolate...oh. my. lawd! Amazing! The rest of our time at the resort we kayaked down at the river below, laid by the beautiful pool, took in the views/nature, and got up close and personal with wildlife! Howlers monkeys, toucans, hummingbirds, butterflies, frogs, and yes, huge grasshoppers and spiders too.
Oh and the rooms! Two words....THE SHOWER. If you are considering Belize, I would HIGHLY recommend splitting your time between Copal Tree and Thatch Caye. It really is the best of both worlds.More
