Our food tour guide in Bologna recommended us to come here and so we planned in a Friday trip with this for lunch and the Hombre / Panini motor museum for later in the afternoon as a day out from Bologna.
Giulia provided an excellent tour of the small operation here making balsamic vinegar from their own vineyards. We saw the whole process and were lucky that day that they were busy heating the must, the smell was lovely. I now know much more about the ageing and blending process and also the different grades available. Very useful insight also into the reason that cheap stuff in the supermarkets is so very different to the real thing.
After the tour we had the set lunch which was wonderful and excellent value.
If you are in the area and looking for a visit to a producer I can heartily recommend this one.
