I had dinner at Taverna Estia in Paese Vesuviano, Napoli, two weeks ago during a film shoot in the area, 5 July 2018. With a lifetime experience of dining in "bonne table" of France, Italy, and elsewhere, one can say that this is an exquisite creation, at the level of cuisine, matching wine, and the ambience of the restaurant, in a garden perfumed by white jasmines and herb borders that recall the splendours of Pompeii villas when Vesuvius erupted in 79 AD. There was however no eruption of the boiling volcano during my visit to Napoli: only an eruption of tastes and cerebral sensations.
I would say that the foundation of chef's approach to cuisine is the solid and unique style of Italian meals in their many different regional variations to which Francesco Sposito has added his own totally original inventions. The single glazed oyster on a bed of crushed ice, one from the long tasting menu, is a splendid epicurean event. It needs a rare skill to have achieved so much in this restaurant and the skill of the chef and his Brigade in the glass fronted visible kitchen is equalled by the management of the dining room by his brother Mario and his wife: the tranquil presence of chef's mother and the serving young ladies. It was altogether an exceptional moment. One should not forget to note the different wines that accompanied each course, particularly the aperitivo, a pink sparkling wine made in the style of champagne, the white and red wines that are sourced with a masterly knowledge of wine production in Italy.

If I had any doubts that the south was still behind the north in culinary terms this visit would have cleared those. They are not and in creativity and innovation they may be ahead
Mario and his brother have a gem of a restaurant and the way they run it makes it even more special! This was one of our best meals not in the South of Italy or on this trip but ever. To put it simple I have left three star restaurants less impressed.
The whole experience started with the booking process and welcome which makes you feel almost like you are invited to family and remote location ( most built in sat naves struggle) google the football stadium and park there also. The building and garden looks like a Mediterranean version of the French Laundry ( also a lot of greens which will be used in the menu grow here)
Three tasting menus and a la carte are on offer we were lucky to have the sea tasting menu and some a la actress dishes. The attention to detail and visual presentation is some of the best I have ever experienced and you are at times almost sorry to tuck in - the service lead by Mario is running so smooth that you also don’t notice.

His wine matching skills are unbelievable sadly however most of his suggestions are limited releases of local production so great to enjoy whilst there but impossible to find. Two out of my three favourite southern Italian wines I found there another fiano and a red from Campania which went with the sword fish

The food - 9 different breads all made in house for every service the bear yeast one my favourite followed by the focaccia
The amuse bouche are served in fingerfood form and invite you to discover the great products of southern Italy excellent veg (it ll be a while till I buy tomatoes in the uk again), fish loved the Italian sushi Lardo......

Starters my wife had the signature squid tagliatelle cooked sou vide 10/10 a perfect summer dish
I had a lobster dish in craft beer sauce on broccoli- loved the sauce and the veg the lobster showed a bit that the Atlantik lobster we get on the island might have its claws a cut above the Mediterranean ones something I have also experienced in Greece 9/10
I went on the have pasta with raw prawns and a seafood sauce which was out of this world one of the best pasta dishes I had 10/10 my wife’s risotto with clams and prawns was keeping up though light and fresh it showed that you can eat risotto in the heat of summer if done rightly....
Her swordfish as a main showed that well cooked spada can keep up there with tuna again the presentation and the sharpness and bitterness of the green pepper salads with it were just perfect 10/10
I had a lamb dish of variation of perfectly cooked lamb rack which could not have been done or presented nicer 9/10
There were many more little niceties and giveaways petty fours, macaroons.... too many to list and watched the the brigade in the kitchen through the large window is just an experience

What a great afternoon
Grazie mille
The price- more than ok for the level
Every food who visits Napoli should make the trip out
