Mutatis mutandis and ceteris paribus our experience matches that of Julespros in the single other review on this page.
Week-day night in Moulins; I and my companion were resting after a very tiring conference at Vichy, and wanted a nice meal. Le Trait d'Union was open, but with few customers ..
Elegant dining room, fine table linen and glass ware, comfortable chairs .. all served to make us relax as did the coupes de champagne...
The chef was ALONE in the restaurant, but what he served was impeccable.
I had the best quality foie gras I ever tasted, crisply fried on one side wthout melting (my companion made the wrong choice and took a salmons dish; there was nothing wrong with it at all, on the contrary it was delicious, but mine was better...). Then a thick, square rod of fillet of maigre that was fried on two of the four sides, and for dessert a fantastic choclate composition. For wine well-chosen and generously poured glasses of chardonnay white with the starters and of a red Menetou-Salon with the fish. Cognac and Armagnac of exceptional quality concluded the meal, which at € 160 was not cheap, but we left with a feeling of money well spent.

We had lunch here on Saturday and it was fantastic. They went out of their way to make us comfortable. The amuse-bouche were excellent, first a outstanding salmon tartar and then another with 2 perfectly poached quail’s eggs in a Jerusalem artichoke purée. It was one of the best small plates I’ve ever had, anywhere in the world. Then we had diver scallops, perfectly cooked and unctuous. The entree was a perfectly cooked piece of wild cod, on a purée of potato with lemon butter foam and chive purée. This small, unassuming restaurant is well deserving of it’s Michelin recognition. Many thanks to all the staff, everyone was professional and friendly.
