The energy and knowledge shared by the Master Cheese Maker and his wife was fantastic. We arrived at 5:00 for a private tour and mozzarella making the organic fresh wholesome old world way! A true Artisan experience . We were thrilled to stir , stretch and roll with a lot of help ... fresh mozzarella balls and ties! Learned about ricotta and various other cheeses. We were then treated to a very generous cheese and wine tasting like no other! Sampling many wonderful cheeses .
This was a real treat and we learned so much!

No more shredded mozzarella for us!!

Thank for a wonderful experience and forever memory!

We found this place by visiting Sisina's snack bar and made arrangements directly with Biagio (adjacent store) for a class later that week. We had a wonderful time. We learned and practiced at how to make bufala cheese. Obviously at 9AM we didn't do the wine tasting, but we came back with the cheese we made, other local cheeses, a bottle of wine and more.

Highly recommended.

I shall never forget this. Biagio brought to life how to make Mozzarella. There are some five steps. The final step entails breaking of the pieces with a pinch like motion. This mozzarella was totally different to what I have tasted before. My wife must have eaten aa gallon or two (if that is the right unti for cheese). Since then, I have become very specific about mozzarella freshness. Once, you have tasted this, you cannot go back. You must store your mozzarella in water.

Made mozzarella by hand under Biagio's tutelage. Followed by a tasting of our creation and other italian cheeses paired with a local rose

This is the place to stop for cheese lovers.
So many good cheeses here to buy and enjoy.
The ricotta in particular is so melt in the mouth wonderful and they've been open sice 1800. The year not the time!
So fun and such delightful service.
