What a great late morning we spent here! The surrounding country is calendar level visuals for Tuscany everywhere you look. The farm stands on a tall knoll with splendid views on all sides. The tasting room is perfectly natural and perfectly Tuscan, REAL in every regard. And the Pecorino is WORLD CLASS. The presentation is tasty and educational. After the tasting (ours included wine) you will- you really will- want to buy some of their cheese to take with you and, of course, there's a retail shop just down the hill from the tasting room. You can purchase meat, wine and beer to go with your cheese purchase as well. My favorites were the "Fresco" and the "Alle Vinacce". But do the tasting because you'll find your own favorites that way.
One other enlightening thing that I have to mention. The nearby winery with whom they paired for their wine/cheese tasting is 100% "Green". Everything they do, they do under their own power. I'm a US small government advocate and so am wary of government FORCED greeness. But here they have a profitable business model that takes advantage of renewables. WE could learn a lesson from their rational and symbiotic implementation design.
