For Grand Cayman Island birding, the person to contact is Stu Mailer at the National Trust. My wife and I went birding with Stu in December '09. It was a very successful and enjoyable experience. He knows what's to be found and where to look. Stu's a very knowledgeable and personable guide.
Besides where Stu might take you, be sure to visit the Queen Elizabeth Botanic Park for birding (especially the entrance road and parking lot).
