This was our visit to the French Restaurant, Bocuse; the only full restaurant we hadn't tried yet. As expected, all the staff are students, with the exception of the Chef in charge and the Hospitality Instructor who oversees the wait and service students.
As we have experienced beforehand, everything is very precise and exacting, with the usual minor omissions which are understandable in any teaching practicum. These are overlooked.
The food is Very Good, bordering on Excellent, but not quite. Once again, it is a teaching school and "things happen".
The obvious flaw of the evening was the Chicken dish which came out with somewhat soggy skin due to the layer of fat under it that was not rendered properly, most likely due to insufficient heat. The chicken itself was done properly and the sauce helped the flavor where the non-crisp skin did not. If this was a Confit, it did not meet the criteria.
The Duck, "Shepard's Pie style"' was different and delightful, with the mashed potatoes and roasted vegetables perfectly prepared. The fish dishes, both Salmon and Sole, were light and not over cooked.
The wine list is extensive, as you would expect in a French themed restaurant. Surprisingly, there were no French beers or ales offered; the closest I got was a single offering from Quebec...close but no Cigare.
I recommend that you give it a go if you are in the area, you may experience a meal prepared by the next great Chef.

Bocuse is a fine French restaurant, served by students at the CIA. Pea salad was not a big thrill (too odd); stinging mettle soup was tasty but modest: one clam, one quail egg, missing prosciutto. Char with vegetables was excellent as was the rolled sole, mushrooms and scallops, with a divine BĂ©arnaise sauce. We enjoyed the inventive desserts: tiny layered carrot/raspberry cake; chocolate cone, coconut ice cream and a long Chow Mein noodle covered with popcorn and chocolate sauce over everything.

What an Experience! The Culinary Institute was truly an incredible experience. We did the tour and taste testing which was very interesting. We had dinner in the American Bounty, which was exceptional. We had coffee in their coffee bar and bakery, Apple Pie. A very fun day.

We don't get here as often as we would like because it is a 75 minute drive but we are never disappointed when we dine at the American Bounty. This was our first time to come for restaurant week lunch ($22.95 for three courses). We will definitely be doing this again because it was quite a meal for the price. We had our choice of quite an extensive menu and it was very hard to decide but I picked their grav lax appetizer. It was so beautifully presented I didn't want to touch it but I did and it was outstanding with other interesting foods on the plate. My lamb duo with potato gratin was excellent too as was my dessert - a 5 inch strip of soft chocolate and cherry presentations (recommended by our waiter). Hubby enjoyed their tasty andouille squash soup and duck breast but was a little disappointed in the apple slices on a crust with caramel sauce. Our waiter was very personable and service was good.
We were pleasantly full but not miserably stuffed after this great meal.

Make a trip to the campus in daylight if you can. It’s beautiful. All three restaurants are in the same building, same floor, same campus: The Tavern, where we ate, Bocuse and American Bounty. Accessibility is an issue for those less ambulatory; park in the garage, elevator to the dining areas and long walks down the hall. Quality and presentation of the food is top notch. The Tavern is smaller, more informal and less expensive. Get there early. We enjoyed GF pasta with bolognese sauce, meatball appetizer and chopped salad with perfectly cooked chicken. It appeared to us that the chefs to be were less comfortable as servers. You don't need reservations at the Tavern, but call ahead at least 60 days for the other two.

I’ve been frequenting the Apple Pie Bakery and Cafe for years, actually since it’s inception. It’s always been one of my favorite places, even with the steep price increases in the past few years. With the advent of their new full service last year, coming here had topped my list of local favorites. Not anymore! The new self-serve approach is awkward if not awful. While still paying steep prices, one must now take the bag of goodies to his or her seat, but not without first going back into the hallway and returning through a different door. Here’s hoping they turn things back to the way they were previously.

We finally got to a meal in this world renowned dining facility.
After a attending a wedding nearby we decided to take advantage of the proximity to the CIA by reserving a table for lunch.
For starters it’s on a beautiful Hudson Valley campus.
The ambience and service in the restaurant were excellent.
The menu tho diverse was limited yet very gourmet.
My husband and I shared 4 courses none of which wowed us.
Everyone should try it once but it doesn’t compare to other fine dining meals for the price.

Last week I happen to visit with my family to the Apple Pie Bakery...This had been my favorite place to have a good lunch for the past several years...To my consternation the food is unpalatable and the introduction of self service sounds like Fast food with a plate and serviette . I would avoid this place in the future

Very nice and interesting place to have dinner. I really would have liked more direction while in area. Hard to figure out if you need reservations and information about CIA. We came for dinner did not have reservations but we did get in for a 6:30 dinner. When we completed our dinner, which was excellent. We wanted to go to the book store gift shop. Bummer it closed at 6??? What about the dinner crowd.

We were getting ready leave Hyde Park after a visit to some historical sites and I thought that I would take a chance at having lunch at the CIA. The parking lots were filled and it turned out they had a graduation that day. We stopped at the information desk and it turns out they have two fair sized rooms where you can go and have lunch without a reservation. Our wait was only 10 minutes and we had a very nice lunch. The servers were students and quite friendly. We had a surprisingly good time. If you are in the area don’t hesitate to go in and enjoy the atmosphere and food!

We spend our summers in New Paltz & wanted to go here for a while. We finally went with a group of friends. It was a unique experience.
We went to The Egg. It is cafeteria style & mainly for the students & staff.
Anybody can go.
There are a variety of food stations serving a variety of foods.
Pizza, Asian, burgers, salads, breakfast station, & many more.
We had pizzas which we shared - very good.
I had bulgogi nachos - quite unique. The "nachos" were more like fried wontons. There were several toppings that brought it all together.
Prices are very reasonable.
Since we were not students or staff, they charge a 20% charge on top of the regular prices. Still a good deal.

Seven of our family dined in the American Bounty Restaurant at the Culinary Institute Of America (CIA) and had a simply amazing meal. Fortunately the "price fixe" menu was available - two selections from the entree and appetizer or salad as well as dessert for $26 per person. Amazing prices!
The cuisine was absolutely delicious: ranging from butternut soups to fresh oysters to cod and salmon to duck and tasty desserts, including a delicious panda cotta, not too sweet or too tart. The service was provided by students who are chefs in training - very polite and attentive under the watchful eye of the manager.
The atmosphere is tastefully pleasant and draws from the architectural heritage of an original Jesuit retreat with plenty of windows looking onto well maintained landscapes.
The costs for the seven of us for lunch (no alcohol) came to just under $260, including a 20% surcharge for student support.
Well worth it but make reservations!

Went here instead of the Apple Pie Bakery to try it out for the first time. Food was good, casual style. Service was very good though it would have been nice to have been offered a refill on my coffee. Tables for two are too close together. Prices for beverages was very high ($4.00 for tea or coffee).

I had lunch with several friends at The Egg, which is the student “cafeteria” at the Culinary Institute of America in Hyde Park, NY. There is always a great selection of foods, grilled, fried, American, Mexican, salads, main dishes, and a special booth that changes every month. This month is Korean!
There’s also pizza, drinks, desserts, and the beer they brew there!! Come with a debit card; they don’t take cash!
