the cousine is really exclusive and the service is top. the prices are really fair. 80€/menu with numerous courses per person + good wine at 35€/bottle. it was a perfect expericence.

We arrived here on a weekday evening, we were the only ones there (two other couples later arrived, otherwise it was empty). The service was cool and a little condescending to start. We ordered a tuna tartar and truffle egg to start. The tuna tartar...was inedible, we literally couldn't force it down, tasted old and bad. Ate two bites and left it. We're at this point really worried about the tuna served red we ordered for main dish and rightly so. What arrived was a grey (photo included) nightmare tasting equally bad as the starter tuna tartar... Nothing about out this experience was Michelin star. At this point we sent it back on account the fish was absolutely not fresh (not to mention overcooked so badly it was grey). The food was accepted back, no apologies offered but the menu was brought out and we were offered replacement dishes. I had a the pigeon (nothing wrong with it, perfectly cooked but not exactly exciting or innovative flavor wise) which was nice and my partner a lobster salad (also nice but nothing special). I'm so disappointed with this experience.More

We had lunch at this beautiful restaurant and we were not disappointed. We had the tasting menu which was absolutely gorgeous.. We asked for wine recommendation and it was nice that we were offered local Wine at a very reasonable price. The service was fantastic...and despite our lack of Spanish this did not matter. We came here on October 8th for dinner and had both their tasting menu. It was an incredible experience! I cannot say I loved everything... I was not impressed with the first two servings: the tartar de atun con yema de huevo y la ensadilla...de marisco (but my wife liked them both). The highlights for me were: tartar de remolacha, the carpaccio de boletus (to die for!) and the merluza cruciente. I disagree with some recent reviews complaining about the service. They were always willing to explain in details each serving and answer my (perhaps silly) questions. All in all a memorable night!More

Superb original meals! Zaldiaran truly deserves its 1-star Michelin rating. We very much enjoyed the degustación menu, and the accompanying wines were excellent. Not cheap, but reasonably priced for the high quality!

We were in need of a treat after a few weeks of unusually poor weather across Spain, so we opted for a Michelin star experience as an escape from the drizzle. Unfortunately the reviews and accolades do tend to up expectations and we were both...left feeling a little underwhelmed. I'd actually say it was 'good' (3.5) rather than 'very good', but we don't get that option. On the positive side it is an elegant dining room and the staff were very welcoming and attentive. I do wish restaurant interior designers were forced to sit on banquette seating for 2 hours straight though, I'm sure they'd stop fitting them pretty quick. No cushions on offer, so we improvised by rolling up our jackets. (Other restaurants eg. Canadio in Santander, do provide cushions). Then I struggled a bit with the menu. There is a tasting menu for 75 euros, which we declined on the basis that it wasn't very good value if you were not going to drink the accompanying wines. The dishes I liked on the a la carte menu seemed to be only available if you both had the same thing. So I ended up ordering steak, which I didn't really want, although it turned out to be the star dish of the meal - beautifully cooked and presented with a delightful sauce. So top marks for that. My husband enjoyed his tuna belly very much. We had started with vegetable tempura, which was OK, and the crab salad. I hadn't appreciated that this was a very generous portion of seafood and potatoes in mayonnaise with nary a green leaf in sight. Tasty, but oh so rich. We didn't have dessert, but did receive a free taster dish of mini desserts, which was a kind gesture. So a mixed experience and we didn't feel it was worth the 105 euros. This was approximately double the cost of all the other meals we had this holiday, some of which had included aperitifs, wine and dessert, and been of equivalent or better quality.More

We had high expectations for this restaurant which holds a Michelin star and two awards in the Repsol guide. The place is well decorated and fuRnished, ample and cozy. Lighting is good and the sound level as well despite being full. The most important aspect,...the food, absolutely brilliant. We had the chef's menu (menú degustación). It offers: Top quality ingredients cooked to perfection in challenging and well achieved combination. The choice of wines and cava was very appropriate. Staff was competent and service perfect. If we would have a recommendation for improvement we would advise to explain a bit more the dishes. Explanations were a bit too short and fast.More

We were quite excited about trying a Michelin star in Spain's food capital region. The Basque Country is known for its exquisite cuisine and Vitoria should not fall much behind from San Sebastian. And for most of the places we visited it didn't disappoint. However,...I can't say the same about Zaldiaran. There's a different expectation when you visit a Michelin star. You go there for as much the food as the experience. While I can't say the food was bad (it wasn't at all), it wasn't unexpected as I like Michelin star dishes to be. Well crafted, full of flavour, but not surprising. We went for the Chef's menu. I must say the best part of it were the three starters, which come all at once. A coffee & milk Nigiri was to die for, even though hard to eat with your hands. A spoon would have done wonders. The scallops were too dry and overcooked - something I would never expect from a high-end restaurant. It was also a shame, because it's one of my favourite foods. The wonton millefeuille was soaked in sauce, making it look more like a Lasagna gone wrong. Moderation would have been advised. Service was way too fast with no additional food offerings between what was given in the menu - I guess there's always a first. Staff was kind and polite. They were able to advise the best wine to go with the menu - and they were right, the Rueda was delicious. But we did miss a bit the whole story behind the food that waiters usually tell guests. Instead, we were given a page with the full menu and pointed out what was to come. We speak Spanish so language was no barrier here. We also found it rather odd the presence of brochures on the table promoting the restaurant as a party location serving over 300 people. It made us think they were more focused on quantity than quality, and that may well be their biggest fault. Again, good food and service, but I'm afraid it is not deserving of a Michelin star. A bib gourmand at most.More

We have had dinner in this restaurant during our holiday in North Spain in February. The restaurant offers a very good value for money tasting menu. This winter it was a truffle menu (which can be found on their website). The dishes were truly amazing!...We have eaten in several Michelin starred restaurants, and this was definitely up to those standards. The dining room is decorated nicely and the tables are positioned so that every table has enough privacy. The food was perfect! In total we have spend 138 euro for 2 persons, for the tasting menu including a bottle of wine, a bottle of water and coffee. You should definitely go here!More
