Chef Julio was amazing! He laid out everything we were going to do as well as the history of the foods we were going to prepare. Then we did a market tour (about a 20-minute walk) into Zona Romantica to get all of our ingredients....He stopped along the way to give authentic, local food recommendations. We made 6 or 7 different salsas, ceviche, stuffed poblano chiles (chiles rellanos), Chicken enchiladas with mole sauce, and tequila tasting. Throughout the entire 5-hour experience, Chef Julio was teaching how to make the recipes, and Assistant Chef Aldo was keeping everyone entertained and cooking. They are very personable and very knowledgeable about Mexican cuisine and culinary. I walked away with a giant notes app of Mexican slang, cooking tips and tricks, and restaurant recommendations. This is on top of the PDF they sent at the end of the class with all the recipes and YouTube channel to walk us through cooking in the future. I would highly recommend Chef Julio's Gabby's cooking class!!More

My husband & I took a cooking class here with Chef Julio Cesar Castillon Perez & it was amazing! We learned so much about the regional culture, food, & history in addition to learning to cook some fabulous Mexican dishes & sauces. Chef Julio took...us around the neighborhood & taught us how to pick out the best ingredients from the fish market, meat market, tortilla factory, spice shop, produce stands, etc. Then he took us step by step through making fabulous dishes in the covered rooftop kitchen. 100% worth our time, and money well spent!More

Nice place with an award winning chef…who does cooking classes and is on TV! Had a chicken mole dish with green and brown mole and a nice dessert of flan cheesecake. I’d come back! Very nice venue!

I highly recommend this restaurant while visiting beautiful Puerto Vallarta. The food is so authentic and delicious. Lovely setting and everyone that works here is just terrific. I also highly recommend trying one of Julio's cooking classes. It was so much fun and very educational...- I'm having so much fun replicating the recipes here at home. Try the enchilada mole - it's WONDERFUL! Margaritas (try the Passion Fruit one!) are excellent as well. You definitely won't be disappointed if you try this restaurant.More

We experienced fresh authentic Mexican food at Gaby’s. We ordered the Big Burrito and shrimp enchiladas and everything was delicious. The waiter was friendly and even shared a little magic trick with us at the end of our meal. Really enjoyed our dinner here and...would recommend Gaby’s to others visiting Puerto Vallarta.More

I did the cooking class and it was such a great way to spend the day! Included shopping locally for our ingredients while learning about them and their flavours. Chef Julio was a great teacher. I only wish I had done it sooner to enjoy...all the local spots he recommended we eat.More

Gaby's has a wonderful cooking class that we participated in. He starts off introducing himself, and his background, and a description of what we will be cooking. Then it's off to the local outdoor market to purchase all the ingredients for the dishes we will...make. Along the way Chef Julio presents a great walking tour about the history of Puerto Vallarta. The shopping was a lot of fun, and very informative. He also points out some of the good taco stands along the way that he recommended for later visits. Then it's back to the restaurant, where the roof is set up as a wonderful kitchen for our cooking class. He gave us all preparation tasks to perform as we made several different types of salsas, guacamole, chili oil, and taco chips. We then worked together with Julio and his helper to make chicken enchiladas with an excellent mole sauce, and chili rellenos. Everything was incredibly delicious, and we a ton of fun with all of the cooking. I can't recommend this class strongly enough. It is a must do when you come to Puerto Vallarta.More

The food is just ok. We had a decent meal, but the service was pretty slow. The real reason for the three stars is that the waiter tried to scam us by telling us our credit cards were declined. Called our banks and no attempt...to make a charge was made on any card. As a paying customer, you should not be forced to pay cash when cards are supposedly accepted.More

My partner and I first stopped into Gaby’s on a Vallarta food tour and we had the most amazing mole! While we were there we saw a sign that the chef, Chef Julio, gives cooking classes, so we signed up for one for a few...days later. Since we visited in the low season there wasn’t as many people and it ended up being a private class— it was the best part of my trip to Puerta Vallarta! Chef Julio is so kind and knowledgeable, he took us to the markets to buy ingredients for 4 different salsas, ceviche, and mole. He taught us how to pick out the best ingredients and where to find them, and along the way he showed us all the best spots for tacos and to support local vendors. We cooked in a rooftop kitchen and listened to music and talked while he showed us how to make the very best authentic Mexican salsas and our own tortillas from scratch. The food was amazing, but it was Chef Julio who made this experience so memorable for us. Muchas gracias, Chef Julio and Aldo! Highly recommend for anyone who loves good food and loves to support a family-owned business.More

The cooking class with chef Julio and his assistant Aldo was such a great experience! My partner and I got to go to the local markets to pick up the ingredients and Julio explained what to look for when picking the vegetables/ peppers. Julio also...recommended local spots to eat along the way! He does a great job sharing the history and culture of the food. The cooking class only consisted of my partner and I since we went during the low season so we had a private experience and we got to hang out and eat with Julio and Aldo!! Highly recommend signing up for the cooking class. You can’t beat the price and the experience!!More

It’s been a while since we’ve been to Gabys. We will never wait this long again. Everything was amazing! Our food and drinks were the best and the service is seriously probably the best In Puerto Vallarta. Please come here. This family has been here...in PV for a very long time and they deserve our supper. They’re the best!!!More

We really enjoyed our cooking class with Julio and highly recommend it. The outdoor kitchen was a dream to work in, the recipes were amazing! Julio is very knowledgeable on the history of PV, it was very interesting to listen to him while cooking. I...would recommend taking this class at the beginning of your stay in PV as Julio provides lots of recommendations of good places to eat and buy ingredients during the walk to the market.More

My friend and I took Gaby's Cooking class. Let's start with the positive. We learnt some stuff about PV and Mexican cooking, we had a good time and the food was excellent. Now for the not so good. I wanted to learn to do stuff...that I could repeat at home and make for my family. The way the class is thought, it is impossible to follow one recipe from beginning to end. My friend and I heard Julio say not to worry, that he would send us instructions. We only got a thank you email with links to leave reviews. When we wrote to Julio to inquire about it, twice, he did not even bother to answer. UPDATE: Following this review, Chef Julio did finally reply to our earlier emails and sent the recipes. He stated that something must have gone wrong because he always sends them. Thank you!More

Took Julio’s City Tour and Cooking Class with with friends during most recent visit to PV Chef Julio Cesar Castillon Perez is knowledgeable and passionate about his home, culture,food and family legacy. You will learn about more than food. You will get a walking tour...of the city and all Chef Julio’s favorite eateries. I recommend taking this class early during your visit so you can take advantage of all this information. Our class was salsa & sauces including mole and Gaby’s family recipes. Wear your walking shoes and prepare to work the Mise en place is work, but the pay off is worth it.More

We did the Taco Tuesdays and it was 5 hours as well - 9 a.m. - 2 p.m. Our family had a blast shopping, prepping, and enjoying a truly authentic Mexican experience.
