Once the travel dates were set, I felt so lucky to snatch a reservation on the second day of their new menu “Originality” when reservations opened up. I had heard so much about RAW, and the experience did not disappoint! The ingredients in each dish...were creatively combined: who would have thought of mixing uni with peanut butter or making an artichoke crème brûlée? Each dish was also beautifully presented and described in detail by the staff. Most importantly, they were flavorful! The surprise of the night: Chef Chiang was present, and we took a picture with him. Will be back next time we visit Taiwan!More

It looks like everyone who tried to book Raw had some excruciating experience. I was fortunate to have been given a chance to try the dishes. It was a year end menu and hence, the menu offered dishes from all seasons and some were made...by chefs from Spain, Japan and US. I thought the food mediocre and it seems that more thought was put in theatrics and high drama that the quality of dishes. Dropped names of celebrity chefs (choose a knife to cut the duck and each knife was uniquely designed by a renowned chef). Each dish had a story and while he followed the Octaphilosophy of gastronomynin Raw, he seems to have forgotten about the principle of sustainability. I wonder if having a Michelin star means not observing sustainability? it was similar in the other restaurants also. I guess if you are interested in performance art, high drama and theatre, Raw will be an interesting experience. Personally, I am more interested in content.More

Raw is known for its excellent cooking. The restaurant has two gigantic pine wood installations, which offset the faux industrial environment, and create a "back to nature" impression. The Michelin Guide awards Raw two stars for its excellent cooking. The cooking is innovative, and has...the flavour of Taiwan street food. It's futuristic. By the way, Raw serves a nine course set menu. Raw is popular, but affordable, it's best to book in advance.More

Raw is an indigenous version of haute cuisine. Raw uses seasonal produce, for fresh flavours and textures. You do not choose from the menu, it's fixed menu only. Diners are in for a surprise.

This restaurant is very creative and uses a lot of special local ingredients. Taste was wonderful too. Need to book online in advance; most tables are for 4+ people.

I think the young Chef Huang Yi Lun is the tomorrow shining star, who deserved to have a 3-star honor. We have been to all the three stars and two stars restaurants in greater San Francisco and Tokyo. Our favorite restaurant & chef used to...be Benu by Corey Lee. But not anymore. This is not only the best Chinese French Fusion cuisine with fresh local seasoning ingredients, we raised our eyebrow for all the amazing combinations and beyond our imagination. We were told our menu is the signature of four seasons of 2019. We love everything and appreciate the artwork and multiple layers of flavors and just melt in your month in a harmony way.More

The bold presentation of “bistronomy” cuisine at Raw will challenge your taste buds with unusual ingredients, as well as pleasing the palate with more familiar flavours, although these too are often served with a twist. Raw’s mission is to bring a fresh interpretation of Taiwanese...flavours to the table. You might find raw egg yolk, edible flowers and tree resin on the menu alongside local specialities such as bitter green melon, tofu and radish. Presentation is key and there is an element of showmanship in the way the food is served at the table. Black truffles are grated with panache, while vanilla essence is dribbled from a dropper onto a dessert. The emphasis is on quality rather than quantity, with portion sizes on the dainty side, so the inclusion of a substantial-looking bread basket is most welcome – hearty hunks of warm, white loaf with a crispy crust, served with whipped butter. The style is described as “experimental haute cuisine” and not every experiment is entirely successful. The raw egg yolk was not popular with our party of four, and dishes which dare to be different will definitely not please everyone. Even so, an evening out at Raw has all the ingredients of a memorable dining experience.More

IF YOU DONT ACCEPT RESERVATIONS FOR KIDS PLEASE PUT IT IN RED ON SEVERAL PAGES OF YOUR WEBSITE! 0 Stars! Please make your website more clear. I booked this restaurant for our family gathering to celebrate my kids birthday and get together with family in...Taiwan and Singapore. A day before our dinner, we were kindly told by the staff that our kids could not join. Item 11 on a laundry list of items, was that kids cannot join. Thankfully we prepaid all 8 seats and have wasted almost 1000 dollars on this place, and now have no place to eat. I was a fan of Andre Chiang in Singapore and went to his restaurant several times. Not anymore.More

We come again for food tasting & gourmet journey and five senses inspiration. Again this season’s creation satisfied us a lot with not only creativity that makes local food into French gourmet show that surprised us a lot but also the artistic presentation & great...service spoiled us. The flavors, the culinary art & even a simple bread really pampered us. We took pictures, smelled deeply & ate slowly to enjoy this theater like dining experience. Amazing dinner experience at Raw. Impeccable attention to every detail by the staff. The food (summer menu) was quite creative and enjoyable. I did not love every single course but I appreciated the cohesiveness of the tasting menu. Fantastic wine pairings as well.

The best Michelin-starred restaurant ever in Taiwan. The ingredients are great and the dishes are all very creative with very beautiful presentation. Don't miss the baked bread and desserts which are extremely delicious!

I like how casual the ambiance of Raw is; there was a healthy amount of chatter all around. The food, for most part, was well thought out and presented nicely to us. I enjoyed the creativity and the taste for almost everything I had that...afternoon. When it was time to dig into the bread (which was delicious), we were not given any plates. With all the crumbs scattered on the table, a service staff would so often intervene with a huge wooden brush, which is more suitable to be used in a workshop, and that got a little annoying. Oh! We also bumped into Taiwanese band "Power Station" in the restaurant. Super cool.More

We rushed to the restaurant right after a two-hour delay of our flight. They agreed to keep our reservation for some more time after we called them. After we get seated, we start enjoy the amazing lunch. All dishes were nicely and creatively presented. The...chefs well-balanced the presentation and the taste of the food. When we finished the lunch, we need to go to the hotel for check in. The staff were so warm and repeated checked with us to ensure we have the proper transportation. Everything was so thoughtful - from the food to the customer services. No wonder that it got two Michelin stars!!More
