In the middle of the Val d'Arda's hilly, exceeded the medieval village of Castell'Arquato, we find the farm "La Buca". In one of the finest wine-growing in Emilia, in a dominant position, is located this company of about seven hectares, whose name comes from the original location of the old farmhouse. Since the first of the '900 the farm was part of a broader land ownership belonging to the founder of the Dondoli's family, Ernesto. In 1967 his son, Dr. Carlo, realizing the potential of the area, with great commitment, but above all with great passion, turned the hill, then used as arable land and pasture, in flourishing vineyards, doing also build a cellar with all the requirements to produce high quality wines. From this solid foundation, the company has transformed over time, adapting to the requirements of modern production. Since the 80s the management is entrusted to the daughter of Dr. Carlo, Rita Maria, who, with her husband Marco and son Luca, sommelier who represents the fourth generation, contribute with renewed enthusiasm to continue the family tradition, assisted throughout from this valuable and loyal employees. Maximum attention is always paid to every stage of production, from the pruning of the vines to the grapes ripen, favored by the particular exposure and lithology of the land, the pressing, to bottling the wine and now aging in Barrique selected for still wines. The company philosophy has always been oriented to "stress" as little as possible the wine, making only the essential processes: in fact often, over time, we can find in the bottles, the natural sediment. In recent years it has started the production of over-ripped wine made from selected grapes, wilting for at least six months on racks, to be then pressed extremely dense obtaining a must with a high percentage of sugars, which is left to age in oak barrels for at least 3 years. The selling takes place mainly on-site for both bulk and bottled wines, but it has recently started a project that provides home delivery. Parallel to the renewal of the corporate brand is also designed an additional expansion of the cellar, aimed at obtaining a local storage of bottles and barrels in specially air-conditioned environment and a new tasting room on the first floor, adjoining the farmhouse, where you can enjoy, preferably by appointment, regional dishes and ... not only !
