Looking to stay here with my adult son. Does the studio sitting area include a pullout sofa?
Sorry but there was only the 2 of us in a 1 bedroom. I never looked to see if there was a pull out but normally there is. The discrimination should say how many the room tile sleeps

Can you provide more information on the onsite hiking trails? How long are they? What is the terrain like? Suitable for children?
Like most respondents here, I go to Palm Desert for golf, but I agree with the suggestions of: 1. taking the gondola up to the near-top of San Jacinto, and hike up there (although keep in mind that the temperature can be 40 - yes, forty - degrees cooler up top)... or 2. read up on Joshua Tree National Park, and pick a portion to walk there (keep in mind that it can be really HOT in the park, and Joshua trees provide almost zero shade!) There's quite a fascinating section of rock croppings in the middle of the drive through the park that you might find very appealing to hike through. Regardless of which of many options you choose, you'll love Palm Desert, and the Embarc resort.

Can anyone who has stayed here before tell me what sort of things are within walking distance to the resort? Any coffee cute shops / brewpubs / markets? Looking for places with a bit of character, rather than straight forward amenities. I like to wander and explore so anything that may be of interest :)
Not really around this location. It's an easy walk to golf course and to grocery store but that's it. Closer to downtown Palm Springs might get you more of what you seem to want.

On the 5 bdrm casitas, how many bathrooms are there and is there a laundry room in the casita
