We did not choose the inclusive option, though I understand that there are at least 2 levels of food - you may want to check on that. A lunch at the outside bar area was verrrry expensive and not very good. So if you did want to stay on property, the all-inclusion would seem to be a good option. We rented a car.
We cooked in every night, buying groceries and wine nearby or near Boden Town. As we were out and about (we snorkel a lot) we often had lunch at different places (Eagle Ray, Rum Point, 7 mile beach, Georgetown, there are lots of smaller eateries near the main roads that were great and much less expensive. (Have to say, Eagle Ray was fantastic, we eat there several times every time we visit GC.)

I am not sure, but you might want to check with the Resort. We spent the first half of our trip at 7 mile beach and it was absolutely beautiful. Once we arrived at the Wyndham and looked at the ocean, it was brown from the seaweed. However we did use the pools and for additional beach time we drove to Starfish Point (no seaweed, but amazing starfish). The location of the Wyndham is great if you want to explore the Cayman Crystal Caves, the concrete scupture gardens, blow holes & I highly recommend White Sands Glass Bottom Kayaks for the Bioluminescence Tour. A great unique place to eat that is nearby is The Lighthouse Restaurant.
