You can see the Roman Roads (the straight ones!) lead in and out of the hilltop town and the view south towards Lake Trasimeno and Ossia is beautiful.
Great views in the distance you might as well see the Lago Trasimeno which is very famous for being the setting of battle between the Romans and Hannibal.

I would definitely suggest a meal at one of the restaurants on the square or indeed visit the coffee shop, they must have some amazing views when the scaffolding is down.
On a nice day you can sit outside at a cafe with a nice glass of wine and enjoy the view of history around you.

We visited on a quiet day in early August so there was no waiting line for the ticket-access area behind the altar from where you have the closest views of Piero della Francesca's frescos.
