The best part of the campus is that there are different restaurants on the campus where students can apply and share their talents. We had the pleasure of eating at one of the restaurants, the Brewery! The food was amazing and the service was like no other. We felt like Kings and Queens. The one mistake we made was that we didn't leave room for desert. When they brought the desert offerings, it was torture to decline one, but, we did get some to go for later. What a treat! From its engaging architecture, to its magnificent River views; it was a joy to drive and stroll around the grounds. Unfortunately, our visit coincided with the student's spring break; so we weren't able to experience their notable main restaurants (a definite "must", if we revisit the area). We were, however, able to have a wonderfully indulgent brunch at the Apple Pie Bakery; on our last day, before leaving the Hudson River Valley. It was a delight seeing the students starting to move about the campus in their chef and server attire; and speculate on whose skill & expertise we might experience somewhere/sometime in the future.Visited May 2024Travelled as a coupleWritten 21 June 2024

There are a number of restaurants to choose and go online to peruse them and then make a reservation for your choice. Remember that the "staff" you will engage are students attending the CIA. They are not working as your server or the chef, for a paycheck. They are in class, so to speak, as their roles are simply part of the CIA's curriculum. Meanwhile, the menu [we ate at the Italian restaurant] is rather large with many choices. The food? It was marvelous. The service in our case was slow, but for a culinary "experience", our meal was the evening's entertainment; it wasn't just a meal to rush through. Experience overall was good. Staff are training so have to bear that in mind. It was fascinating to hear about the rigorous training, the expense of the students’ education, and the super success rates of the students’ job placements. We were allowed to see into some of the food preparation areas and classrooms. I was humored by a traffic sign we’d seen on the campus, which I’ll post a picture of with my review. When you think of incredibly good food at a top restaurant you equate that with a certain attitude from the wait staff and high price, not so here! The students at the culinary institute are enthusiastic and dedicated to the pursuit of culinary excellence! Our meal was absolutely outstanding and served by some of the nicest young people I have met in a long time. I actually ate at the institute many years ago when I lived in the area and encouraged my traveling companions to take in an evening meal there. They were greatly impressed at the quality of service and also the incredibly well prepared menu selections that we had. I did sample their craft beer made on the premises and have to say it is up there with some of the finest made today! The most pleasant surprise was that we enjoyed a meal that normally you would only find in a five-star restaurant but we did not go into sticker shock from the bill at the end of the night. It was incredibly reasonable given the high-end service and quality we received. Reservations are recommended for good reason as they were very busy with a lot of very happy diners!

Love the concept of the Culinary Institute. They have several student/teacher run restaurants to dine at. We have not dined at their restaurants at least 3 times and have come away totally satisfied with the experience. I highly recommend you make reservations or else you may not be able to get in. The food and service has always been superb.

No way could we get a res on line for lunch at the Bocuse so we decided to go in and ask if they could possibly seat us and they did so promptly. It is $46 per person for lunch and you can choose an appetizer, entree and dessert. The servers are all students and ours was delightful. He helped us with our selections which we then critiqued for him (altho these were not dishes he created). Some of the commenters may not realize that this is a learning experience for high end culinary preparation. Our selections were all excellent and we told them that! Good luck to the future chefs!

Be very careful and sure when making reservations for a tour (or dining, probably) at this location. Reservations are "managed" by 'Open Table' and they are very difficult to deal with. In fact, impossible to make a change or cancellation. As travel itineraries are prone to change, you will be "stuck" with a pre-paid tour fee. I just walked away from reservations for 3 for their basic tour and considered it a donation. Sadly, the abandoned fee probably ended up in the coffers of Open Table and not the CIA student fund.

We were visiting the National Parks in the area and heard that you could go to the CIA American Bounty Restaurant for lunch and that reservations were not required. The lunch is served in the informal Tavern. The campus and building had previously been a Jesuit novitiate before being sold to the Culinary Institute. The building has lots of interesting architectural details.
All the CIA restaurants are in the same building, the meals are prepared by the students and they rotate as servers. The menu is diverse and unique. It included small plates (appetizers) large plates (main course) and sweets/desserts. We started with the soup of the day, for the large plates I had the Grilled almon with roasted asparagus-potato ragout, my companions had the Mussels & Frites and Tavern burger. For desserts I had the sour cream cheesecake with rhubarb-elderflower, they had the cheese board, and milk chocolate cream cake.
The food was exceptional, the experience couldn't have been better.
The CIA is set overlooking the Hudson, the grounds and gardens are beautiful. The college was named one of “The 56 Prettiest College Campuses in America” by Condé Nast Traveler. If you go during the day, leave time either before or after to walk around the grounds.

Once again, the food was stellar. Great products, outstanding presentation and selections. The only area of improvement is the service. This is most likely as the room just re-opened after a term break so the FOH staff had only been on the floor a few days. It will surely improve. The appetizers of the charcuterie plate and the black truffle soup were excellent as well as the duck breast cooked to perfection and served with a chestnut purée and sautéed mushrooms. Desserts were outstanding as well. Nice selection of wines by the glass. The 3 course prix fixe dinner is $58, so it was a relative bargain. A 20% service charge is automatically added. Beautifully decorated room, sophisticated atmosphere makes dining in the Bocuse Restaurant well worth the visit.

Where to begin?
Food was certainly tasty but overpriced.
Really was looking forward to this experience (drove three and a half hours to get there) but was saddened by the way the standards have dropped since the last time we came here for a meal.
The so called “smart casual “ dress code was a joke. People were in cargo shorts and T shirts!
The service was deplorable! What are they teaching these students about waiting tables, being courteous, engaging the guest and being attentive?
Yes, today’s students can be clueless, but being a teacher myself, the problems lie with the instructor
A so called professor was prancing about all evening…… doing NOTHING to encourage her students to be on top of the situations in front of them.
What a disappointment. These folks are in for a rude awakening in the real world of restaurant ownership/management/customer service

THE CIA never disappoints. We visit usually twice a year, spend an overnight and do some touring the next day.
Dinner is always a pleasant and unique surprise and the wine suggestions were paired perfrectly with our halibut.
A must if you have never been up here.

We visited CII for dinner at Bocuse Restaurant. The Institute is worth a visit, lovely campus overlooking the Hudson. One could walk around the campus, dine at one of the many public restaurants - we dined at Bocuse, the French fine dining restaurant. Good choice for a special occasion. There are a number of other more casual restaurants, unfortunately most were close when we visited.

I dined at the American Bounty restaurant with my husband. We had previously had meals at the CIA a couple times in the past and it was always a very special dining experience. Not this time! The food was quite mediocre and totally unimaginative - food we could have had anywhere. Upon our departure we provided feedback to a manager. She acted concerned and offered to reduce the amount of our dinner bill - that never happened. Of course that was not our point. We were sharing our unhappiness with the meal.
It is unlikely we will ever take another chance on this restaurant. …. Very sad ….

There was an huge range of clothing from jeans to semi formal the night we went. No one felt out of place in whatever they were wearing. I suggest buffet pants...the kind that stretch! You will want to eat everything they cook!!

Is there much walking to the restaurant? One of our party has a walking problem and walking any distance is out of the question.

There is a parking garage that is about 100 feet away from the school building. The parking garage has an elevator. Once you get into the building, you will need to walk to the restaurant which would be another 50-100 feet.
