See as many streets as you can in this conserved medieval city. But if you are short on time and just passing through be sure to visit this street which leads to the main plaza. Lots of shops to get a souvenier of the visit

One of medieval streets of Santillana. Not sure why this one is on TripAdvisor as there are many photogenic streets like Calle Canton or Calle de las Lindas. Anyway Calle de Juan Infante is also nice.

The souvenirs available are of a very high quality. If nothing else buy a small ceramic tile that depicts Santillana.
