About
Saltare signifies movement, grace and simplicity - and joy. The name means "to dance" in Latin. These are the qualities that you will find in our wines. Our MCC's are zero dosage - no sugar added. They spend between two and four years on the lees. Grapes are selected from organic and sustainably grown vineyards. We are open by appointment only. We are a boutique wine producer.

Carla's wines and bubbles are simply delicious. Her attention to detail in the wine making process and care of each drop afterwards results in a great taste experience. Call and book a tasting today!

A tasting at the Saltare studio in central Stellenbosch is very different from one at the grand wine estates in the region. You get to meet the wine maker, Carla Pauw, and possibly her dogs as well. She will give you a personal insight into the brand and a taste of her wonderful MCCs / bubblies and the red and white wines she makes. If you like you can also buy her handcrafted olive oil and soap. A visit to this boutique is highly recommended.
