Bheger1 gave a really nice and comprehensive response...I am not a member but I also agree it is totally worth the RMB300 to learn making 'jiaozi'. Great location, useful tips accompany clear instructions (you do need to see and feel the texture of the dough and watch how to fold the dumpling skins to make them properly). Also learning to use the cleaver means you also do it the traditional way - so cool. Once you have learnt it you will easily make it wherever you go. Hope you give it a try.
