About
Established in 2009 (as Porcupine Quill Brewing Company), the brewery forms part of 1000 Hills Chef School where Advanced Students learn the art of Craft Beer Brewing. This brings a unique approach to brewing – with flavour and food in mind. In true craft tradition, we prefer not to follow any particular style too closely but rather experiment with our own styles. Most of our beers follow a pale ale style. This particular style covers a range of flavours and appearances and suits how we brew our beers.

Great little spot. Nice beer tasting and the chef school addition with great food choices was a win! Friendly staff. Not the best view in the areas but nice. Enjoyed our experience.

Decided at the last minute to take a trip down to Durban. So we decided to have a pub crawl back to PMB. Stopped off at our local stop the 1000 Hills Chef School which also has the brewing company. My Daughter who is now 18 but also has her learners was so excited because in her words Dad you can have a few more as I can drive you home.
We were served by a very friendly waiter who really knew his stuff. As a lover of Craft beer there was a favourite that was on tap this Saturday. I ordered a glass and he quickly said Sir how many are going have sir as if you bought a jug you get more for less. Brilliant that's what we did. What a wonderful lunch time and a great afternoon, and after that my daughter got to drive home.
Please you great travellers if you are in the area please pop in and have a meal. Open Thursday to Sunday the food is awesome and the view is spectacular. Give it a go. You can do it.

We visited on a Sunday drive. It was a chilly day but the setting is breathtaking. We love the warm welcome and service from the students. We both chose the woodfired pizzas and were not dissappointed. The bases are thin and ingredients fresh. I had a delicious glass of Bruce Jack sav blanc. The restaurant was buzzing. So lovely to see. Will be back.

We've been meaning to visit the Chef's School for a while now and took a chance they were open for lunch one Friday when taking visitors on a tour of 1000 Hills. We were met by extremely friendly staff and chose to sit outside at a table under the trees so we could enjoy the view. The men enjoyed the taster tray of craft beer before ordering the India Pale Ale. The food was delicious and the wine reasonably priced.
Service was excellent and our waitron chef was happy to answer our questions about their training.

I don’t normally write reviews but this has to be said!
We had a chef meet us at our parking and escort us to our table. That’s definitely different but so welcoming. Our orders were taken and arrived quickly. The food was delicious but I have to commend the brewery on supplying one of the best IPA’s I’ve had the pleasure of tasting. They have a great variety to choose from which you can have as a taster before selecting the one that you like. I am an avid craftbeer connoisseur and there’s not many India Pale Ales that have such a delicious forward hoppiness well rounded mouthfeel as this one. The ratios were spot on and the beer deserves more adoration than I can give it. Why are there only 5 stars for a rating??? I’m giving this place a solid 10 out of 10. I will be back and with beer nerds in tow. Thank you Trevor, the chefs and the brewery for a day that could not have been predicted to turn out this brilliant.

Sadly the craft beer at this place leaves you very disappointed. They have put a lot of money and effort into the infrastructure, however their actual beer is not good. The concept of fresh craft beer brewing, with taps on site is great. However the beers themselves are very badly brewed. They need a professional in there to really get their beer top quality. Their IPA doesn't even taste like an IPA.
Please support them by doing a tasting and giving honest feedback. I really would be happy to have excellent local craft beer on my doorstep :)

Excellent setting at the top of Botha's Hill.
Book in advance to sit outside.
A wide selection of local brewed beers on tap, and those that are not currently on tab are available in bottle.

Absolutely superb friendly staff who go the extra mile. Really interesting craft beers that are brewed on site.
They also have a restaurant as a training ground for the Chef School where you can sit and have an excellent meal with spectacular views over Bothas Hill. They are only open to the public on Friday, Saturday and Sunday though.
They also have a shop where you can purchase biscuits and preserves as well as wonderful cheese cakes to take away.

The beer is really good with many variations. I have tried all the beers and have never had a bad one, all the types are great. The only downside is the students coming to assist you. Their service is great but I prefer to be left alone when shopping.
