I recently took my students enrolled in my "Culinary Science in Northern Italy" course on a 17-day whirlwind tour of Italy. This was the first of 6 cooking classes we took, and it was by far the most extravagant. The entire presentation was completely catered to our group of 17 students, and also included our college's President and his wife. We were split into two smaller groups and Chefs Tommaso and Mario worked independently with each group to have us all prepare an amazing spread for our lunch in a state-of-the-art kitchen. We made over a dozen recipes, including foccacia, gnocchi, pork loin, ravioli, vegetable strudels, and delicious dessert! After we ate what seemed like an impossible amount of food, we also got a tour of the gastronomic library before we left. What a wonderful facility, and even more wonderful people! Our entire group was very impressed and learned a lot. Many of my students even wrote their final papers about this experience. I look forward to bringing classes back here in the future.

Academia Barilla is an Italian food lover’s paradise. The gastronomy of the Emilia-Romagna region combined with the knowledge and expertise of Academia Barilla was for me an incredible experience. I had a private class with Chef Tommi Moroni which was expensive but worth it. Throughout the class I improved on culinary techniques and learned so much more about the subtle finesse in creating authentic Italian flavor. Chef Tommi had a good mastery of English; he was able to communicate clearly and also made the class fun!
I also want to say that all of the staff at Academia Barilla; Chef Mario Grazie, Roberta, Chato… helped me to make my stay in Parma memorable.

I recently had the privilege of taking classes at Academia Barilla, Parma, Italy, with Chef Tommaso. The three-day classes were 10:00A - 5:00P and taylor-made to our group of five in their state-of-the-art facility. The experience was "over-the-top" and so motivational. Chef Tommaso was extremely knowledgeable, engaging and able to teach and share that knowledge. In addition to recipes using fresh local ingredients, we were taught invaluable techniques. I hated to have the classes end and yet I wanted to go home to duplicate all my new skills. If an Italian cooking experience is on your bucket list, I would highly recommend a trip to Parma and the Academia Barilla. I would also highly recommend Chef Tommaso…..best pasta teacher EVER. Thank you Academia Barilla and Chef Tommaso for making me feel like a "chef".

The actual cooking class/demonstration was fine. We were disappointed in the hotel accommodation provided in our package - tile bedroom floors, poor quality breakfast. Our package included a day touring cheese and ham factories and a winery. Those were great. Lunch at the winery was a shared platter of cheese, ham and bread along with the wine. Great. For the included dinner we were directed on our own to a local restaurant where our antipasti was a shared platter of, you guessed it, cheese ham and bread. The 1st course was a plate of ravioli, NO 2nd or main course and then a dessert. All this had been pre-arranged.
Since Barilla is in the food business, and at the price we paid, we had expected an amazing meal, a culinary experience of the highest order. Poor planning on their part to have 2 meals with the same food.

My wife and I attended the Academia Barilla cooking classes and food tours, and enjoyed every second. From learning fresh pasta making techniques to meats and grains to desserts, every class was full of fun, love of good food, and amazing flavors! The chef instructors poured their passion for Italian cuisine into every demonstration, and we could not have asked for a better team than Chef Mario and Chef Thomasa. And the food tours! From a truffle hunt followed by an amazing - of course trufffle themed - meal, to seeing and tasting the making of Parmigiano-Reggiano and Lambrusco, each tour was well executed and the producers we visited were top notch. We will be back!

We took the gourmet and cooking class tour from Barilla Academy. This is a one day event with a tour around the food production factories in the morning and a cooking class in the afternoon.
In our case we went past the cheese, ham and wine factories. A real interesting experiences and we learned a lot about the food and developed a new appreciation for the quality of the food. A lot of information is provided and the more you talk to the guides and ask questions, the more you get out of it.
Cooking class in the afternoon was a blast with a fantastic three course dinner in the end.
In all this was a fantastic experience and I would recommend it if you have the time. Although the price seems a bit expensive, you have to keep in mind it is a full day tour with transport arranged, as well as lunch and a 5 star 3 course dinner included.
It is well worth the money spend.

The 5 day tour I took was as much a foodie tour as a cooking tour. We had 2 days of cooking classes (a class of 14 with 2 chefs) and made about 7 different recipes each day. The other days we saw the making of Parmesan cheese, prosciutto, traditional Balsamic vinegar and a small winery. One day at a gorgeous spa. Incredible food every day.

From the moment we arrived we were warmly greeted by the staff. The building and the kitchens are outstanding and spotless. This is probably one of the most expensive of the choices we had but well worth it. I never dreamed of eating 7-10 main courses a day, but we did. We prepared all in the morning and starting cooking just before lunch. Marcello our instructor was outstanding.
The quality of the food was top notch, we did pasta one day, fish and then meats. We know will go home and treat our friends and family to some outstanding meals. Be prepared to gain 2 lbs a day for sure.
The town of Parma was an added plus.

Academia Barilla is AMAZING; the chefs are professional, knowledgeable, and personable. I would highly recommend it to anyone who loves Italian cooking. The entire staff is dedicated to teaching authentic regional Italian cuisine and making it fun. I learned so much about pasta, breads, desserts, as well as Italian products and techniques. On the tour I gained valuable knowledge about the delicious foods of Parma: like Prosciutto do Parma, Parmigiano-Reggiano, and traditional Balsamic Vinegar.
Each day we cooked together in the kitchen and would then enjoy the delicious food we made and local wines. I met many new friends through Academia Barilla and had a wonderful experience!
Also the Library of Italian Gastronomy is fascinating! I could spend days there reading and looking at cookbooks and menus.

The best cooking school in the world!!!!! Totally personalized cooking class with one of Academia's top chefs... Truly an amazing experience!!! I took a class with my girl friend and we had such a great time... Talking about a romantic trip to Italy... Just WOW!!! Totally worth it

Rudy, my family is travelling to Italy late Spring and we very much hoped to have an awesome gastronomic experience in the Parma region. We thought of a cooking class, but there are so many offerings with Barilla. We thought that a one-day experience of tours, then cooking, then eating and drinking would be perfect. Is that what you did? Which program was it? Thanks.

Hello, thanks for a review to Amanda! I have a couple of questions. The first one is that if I want to have a short cooking course of Italian cuisine do I have to find a company by myself to participate in a course with other people or Academia Barilla puts me together with other guys in a group and I don't have to pay as for the private one? The second question is a price. Could not find it on the website. If I want to do let's say a two-week course for three hours daily how shall I calculate the price? I think it is more a question to Barilla's stuff rather than to Amanda. Thanks a lot in advance!
