Capitol Reef is unique place and it makes sense to stay there at least 2 full days. Definitely hiking is the best way to see main Capitol's reef attractions. But there are several good scenic driving tours as well.

All I can add is that in late September in the middle of the week the entire campground (one of the most beautiful in the area) was full. I would definitely make reservations.
